Thom is the co-founder, with his brother James, of Pizza Pilgrims - a Neapolitan pizzeria company. After a six week “Pizza Pilgrimage” through Italy in 2011 they founded the business with a market stall in Soho. Since then, the company has grown to 25 sites, primarily in London but also in major cities including Leeds, Cardiff, Brighton, Edinburgh, Nottingham, and Cambridge. The business is focused on “Making people happier, one pizza at a time” with a laser focus on product quality and looking after and developing its people.

In March 2026, Pizza Pilgrims triumphed twice at the MCA Hospitality Awards, winning best use of technology and the sustainability award. In 2025 Pizza Pilgrims was voted Best Restaurant Company by the senior hospitality sector.
